A Salad for Your Salad

As much as I love to eat everything, and I do mean LOVE! I eat soup & salad almost every day. I love all kinds of salad: greek, cobb, ceasar, pasta, fruit, and especially a southern fried chicken salad with cornbread croutons because that really exists, at J. Alexander’s.

A Nicoise salad with a cucumber side salad are in heavy rotation at the Raymer house

Nicoise Salad: serving 1

  • Greens of your preference, I used a spring mix
  • 1/2 can Albacore White Tuna in water (most recipies call for tuna in olive oil, but that’s not how I get down)
  • 1 red potato
  • red onion
  • kalamata olives
  • ground pepper

*missing from my recipe for a traditional Nicoise salad

  • 1 boiled egg
  • Vericots or green beens
  • anchovies
  • capers
  • tomatoes

Tip! Quick boiled potato

  • wash potato
  • puncture potato with knife or fork several times
  • drizzle olive oil all over potato
  • wrap potato in wet paper towel
  • microwave for 2-3 minutes for small potato

You can dress your salad with the traditional olive oil & balsamic vinegar or you can make your own quick & delish salad dressing

  • 1/4 cup extra virgin olive oil
  • 1/4 cup lemon juice
  • 1 teaspoon dijon mustard
  • ground pepper

If you’re like me, one hearty salad isn’t enough. You need another very similar salad as a side.

  • feta
  • red onion
  • ground pepper
  • extra virgin olive oil

  1. You just spoke right into my heart specially with those feta crumbles on the cucumber salad. I am a soup & salad person myself but with summer coming upon us salad is a better option for the moment (&maybe some cold soup). It really is my favorite lunch choice in all its versions!
